1. Assist Executive Chef in establishing and maintaining the highest standard of service and generate profits in accordance with the establishment budget within the kitchen and other areas as designated by the Management.
2. Develop and maintain the outlet cuisine concepts and standards for food preparation and presentation.
3. Maintain food cost by ensuring that proper preparation, inventory, requisition, food pars and control systems are in place in all food operations areas.
4. Enforce Anik Hotel food preparation and presentation guidelines to ensure consistent quality culinary offerings to our guests.
5. Maintain food safety & protection. All food in working areas should be in compliance with food handling techniques, to include dating, proper storage, rotation, etc. Maintain the basic food safety and sanitation in accordance with the company policies.
6. Maintain close control over store supply ensuring that adequate quantities of food items are at hand at all times.
7. Achieve departmental Budget goals by maintaining efficient cost expenditure.
8. To supervise the completion of the wage progress report on a weekly basis and critique discrepancies.
9. Assist the Executive Chef with menu preparation and seasonal food concept changes.
10. To ensure the awareness & enforcement of all Anik S.O.P.’s
11. Plan and attend pre-meal briefing sessions
12. Monitor the quality of the food and strive for high productivity by the management
13. Visit twice monthly markets for products and price research
14. Make sure standard recipes are used, and food is presented according to pictures
15. To enforce operational Standards that are reviewed periodically and then updated and improved
16. Follow Challenge Hospitality standards and procedures for the appointment of selected personnel
17. Knowledge of the Labor Agreement as appropriate for your establishment, contemporary human resource management principles and other relevant organizational policies
18. Assist Executive Chef in liaising with Human Resource section by making written recommendations regarding staffing levels
19. Monitor shift changes, sick leave and recreational leave to ensure adequate staff coverage within legislative guidelines
20. Help to identify key personnel for further development and provide structured career pathing
21. Give recommendations for staff promotions within the department
22. Responsible to maintain the overall welfare of our staffs by providing them with the training and resources to take care of our guests
23. To ensure the efficient scheduling of management and associates
24. To be responsible for the accurate supervision of the staff’s time control and payroll systems by working with Accounting and HRD
25. To develop and implement Manager, Supervisor & Staffs training plans on a quarterly basis in conjunction with HRD
26. To implement a departmental daily “15 Minute” training program and promote multiskilling of staff

27. Assist in developing individual training program as approved by Executive Chef
28. To be responsible for the execution of Anik Hotel kitchen Management & Staffs reviews, ensuring appraisals in a professional and timely manner
29. To supervise all aspects of Management including hiring and discipline in conjunction with the Executive Chef
30. To conduct an effective monthly department meeting with minutes and P&A forwarded to the GM, F&B and HRD
